We make this starter pretty much every time we have guests over for dinner. It's elegant, delicious and takes 5 minutes to pull together. We've found that everyone always loves it, so much so, that we've been back to a few friend's houses for dinner who served it back. If you don't have pine nuts, you can leave them out or add some crushed walnuts or almonds instead.
Serves 4 & takes 5 minutes to cook
Ingredients
1 large burrata, or about 200g stracciatella
1 pack of sun-blushed tomatoes (or sun-dried tomatoes), about 250g
Large handful of pine nuts
Drizzle of thick balsamic vinegar (optional)
Pepper
Method
1. Chop the sun-blushed tomatoes (or sun-dried tomatoes) and scatter them onto a serving plate.
2. Pull the burrata (or stracciatella) apart over the top of the tomatoes.
3. Sprinkle with pine nuts and a crack of pepper.
4. Top with some balsamic vinegar and parsley (if using).
