Porridge is one of my favourite breakfast dishes to enjoy on cold winter mornings. Cinnamon and apple make the best, warming combination together and compliment the creamy porridge oats so well. In this recipe we use grated apple, spiced with cinnamon and cooked until soft, mixed through creamy almond milk porridge oats with a splash of maple to add a hint of sweetness. So quick, so simple and gets some great wholesome ingredients into your morning.
Serves 2 & takes 10 minutes to cook
Ingredients
2 apples, grated
1 tablespoon of maple syrup
1 tablespoon of coconut oil
½ teaspoon of ground cinnamon
80g porridge oats
400ml almond milk
Method
1. Place a non-stick pan over a medium heat and add the grated apples, 1 tablespoon of maple syrup, 1 tablespoon of coconut oil and the cinnamon. Mix really well and leave to cook for 5-10 minutes, until the grated apple becomes completely soft - adding a dash of water if the mixture ever starts to catch the bottom of the pan.
2. Once the apple has become soft, stir through the porridge oats and almond milk.
3. Cook for 4-5 minutes until the oats become soft and everything comes together to create a deliciously thick porridge. You can add a splash more almond milk if it ever becomes too thick.
