I wanted to make something packed full of fruit and nuts, while also tasting indulgent and these blondies really hit the brief. They are fudgy, sweet and delicious, with a hint of vanilla to give the classic blondie flavour. The mashed bananas create the gooey texture, while the white chocolate and macadamia nuts provide a sweet crunch. They have definitly become my new favourite sweet treat - plus they only take a few minutes to pull together before baking in the oven.
Makes 18 blondies
Ingredients
For the base
3 ripe bananas, peeled
200g plain flour
200g golden caster sugar
1 teaspoon of baking powder
1 teaspoon of vanilla essence
80 ml almond milk
4 tablespoons of melted coconut oil
100g white chocolate, cut into chunks
100g macadamia nut halves
Pinch of sea salt flakes
For the top
80g white chocolate
Preheat the oven to 180C, fan setting. Line a small deep sided baking tray with baking parchment.
Place the bananas into a large mixing bowl and mash until smooth. Once smooth, mix through the flour, sugar, baking powder, vanilla, almond milk, melted coconut oil and sea salt flakes until you get a smooth batter.
Once the batter is smooth, mix through the white chocolate chunks and macadamia nut halves before pouring into the lined baking tray.
Place in the oven for 35 minutes (30 minutes if you want them super gooey), until cooked through. Once cooked, remove from the oven and leave to cool at room temperature for at least 10 minutes.
Finally, melt the white chocolate for the top over a pan of boiling water or in the microwave. Once melted, drizzle over the top of the blondie and leave to set. Once set, cut into equal chunks.
