hazelnut & stilton spread

This is a fantastic festive starter to serve to veggies in place of dishes like smoked salmon mousse or more traditional pâté. It's creamy and packed full of flavour thanks to the lightly toasted hazelnuts and tangy stilton. I love serving this with some toasted rye bread, on crackers, or even on a poached pear with some toasted hazelnuts on top for a slightly smarter look.



Serves 4-6 & takes 15 minutes to cook


Ingredients

  • 200g plain cream cheese

  • 100g hazelnuts

  • 100g Stilton cheese

  • 50g butter, room temperature


Method


1. Preheat the oven to 180C, fan setting.


2. Lightly toast the hazelnuts in the oven for 8-10 minutes until golden. Once golden, remove from the oven and place into a powerful blender.


3. Add the rest of the ingredients and blend until a thick, smooth paste forms.


4. Once smooth, remove the mixture from the blender and place into the fridge until ready to serve.
