courgette, pea & feta fritters

If you’re looking for something quick and delicious to go with poached eggs for brunch or salads for dinner, these fritters are a great go-to recipe. The courgette, pea and feta combination tastes incredible and makes a dish that everyone loves. The recipe is easy to follow and doesn't take long to make, simply mix all of the ingredients in a large bowl before shaping into fritters and finish them off by cooking in an oiled pan - they make the perfect fritters every time.



Makes 10 fritters & takes 25 minutes to cook


Ingredients

  • 100g gram flour (chickpea flour)

  • Juice of 1 lime

  • 2 organic eggs

  • 100g feta

  • 2 courgettes

  • 200g frozen peas

  • Handful of chives, thinly sliced

  • Pinch of salt

  • Olive oil

Method


1. Place the frozen peas into a small bowl and cover with boiling water. Leave them to one side for 5-10 minutes until soft, before draining.


2. While the peas are soaking, whisk the gram flour, lime juice and eggs together in a large bowl until a thick, smooth mixture forms.


3. Once the mixture has come together, crumble in the feta using your hands, grate in the courgettes and add the drained peas, chopped chives and a good pinch of salt. Mix well until the whole mixture comes together.


4. Place a large non-stick pan over a medium heat and add a drizzle of olive oil. Once the oil is warm, add 2 tablespoons of the fritter mixture and smooth out a little using the spoon to create a circle shape. Cook the fritter for 3-5 minutes on each side until golden on the outside and cooked through. Repeat this process with the rest of the fritter mixture until you have all of your fritters, we usually cook 3 in a pan at a time.
